Quick, easy, and so flavorful! This dish can be made with chicken thighs (boneless/skinless works well but can be done with bone-in thighs as well) or drumsticks. Make large batches of the seasoning to save time on future prep. Enjoy!
Ingredients:
4 – 6 boneless, skinless chicken thighs
2-3 tbs olive oil
salt and pepper to taste
1/4 tsp of the following: ground cinnamon, cumin, coriander, paprika, ginger, dried oregano, curry powder, and cardamom
1/8 tsp nutmeg and clove
1 tsp garlic powder
1 tbs dried onion flakes
Directions:
Preheat the oven to 375F.
Place the chicken in an oven dish, drizzle with the oil, and season with salt and pepper.
Mix the remaining ingredients in a small bowl to make a rub.
Rub the chicken pieces thoroughly with the seasonings mix.
Cover with aluminum foil and bake for 25 minutes or until the chicken’s internal temperature reaches 165F.
Remove from the oven and let rest, covered, for 5-10 minutes before serving.
